Smokehouses on Bornholm reflect the tradition and soul of this Danish island. Their chimneys can be seen almost everywhere and are an integral part of the image of the island. Although the herring no longer comes from the Baltic Sea around Bornholm, the golden-colored smoked herring is Bornholm's culinary specialty.

Smoking fish on Bornholm has a very long tradition. It goes back to the time of Scottish fishermen who stopped here to fish on the then undeveloped rocky island of Christiansø. From there, the smoking of the fish first reached Gudhjem, and from there it spread throughout Bornholm.

At the beginning of the 20th century, there were many small and large smokehouses on Bornholm. The fish were smoked all over the island's coast. Due to changes in law and a strong decline in the herring stock in the Baltic Sea, you can see smoke chimneys everywhere, but only a few of them are still operational.

Allinge smokehouse is one of the most beautiful places in Bornholm, where you can enjoy the sunset while enjoying a tasty meal. Smoked fish specialties are available both inside (90 seats) and outside (150 seats), plus freshly poured Bornholm beer. From the terrace behind the smokehouse, you have a breathtaking view of Allinge's northern harbor.

If we do not want to eat in a restaurant, we can buy fish specialties in the shop and take them with you. In the evening, the smokehouse turns into a nightclub - you can have fun until late at night with live music.

The Nordbornholms Smokehouse in Allinge is open all year round and is located directly on the cliff. The smokehouse has a long tradition, dating back to 1898, it has been owned by the current owners since 2002. Since then, the smokehouse has been modernized and smoked herring is its main product.

You can buy a lot of smoked specialties in the shop. It is even more pleasant to sit in a restaurant in the evening while enjoying your meal and enjoy the sunset overlooking the sea. The small black Fiat 500 is the hallmark of the smokehouse, in the port of Allinge it shows the way to it.

Only open during the summer season, this oldest smokehouse on the island has long been a quaint pub, often with live music and an inexpensive fish buffet every day. The Gudhjem smokehouse is located in the port.

The yellow buildings consist of a smokehouse, a restaurant and a shop. This is probably the best place to taste "Sol nad Gudhjem" (sun over Gudhjem), a traditional Bornholm dish - smoked herring, black bread, radish, chives, egg yolk and coarse salt. You can try this and many other fish dishes in the restaurant menu or in the buffet. Grilled specialties are also very popular. The restaurant is very cozy and offers space for 170 guests.

The largest selection of fish, not only smoked but also fresh, is available in July and August. In high season, another 200 people can sit on the outdoor terraces. In the store you can buy home fish. In the summer months, you can see the process of smoking fish - twice a day from 9.30 am to 1.00 pm "silver fish turn to golden".

Svaneke Røgeri

Smokehouse in Svaneke is open only in the summer season, it is located slightly outside the city center. North of the port of Fiskergade, there are five characteristic chimneys - one of the symbols of Svaneke. During the summer season, the smokehouse is one of Bornholm's most popular places to enjoy delicious fish - in a restaurant or in the sun in the summer garden. You can observe the smoking process here, and at the same time buy smoked fish in the take-away shop.

The smokehouse is located on a hill where a cannon battery was once located when Svaneke and its port were defending themselves against attacks from the waters of the Baltic Sea. Two of the surviving cannons can still be admired during a visit to the smokehouse.

For several generations, the fish were smoked and cooked using old recipes. This tradition dates back to 1900, when the smoking of fish began in Årsdale.

In the restaurant attached to the smokehouse, you can sit both inside and outside and enjoy the dishes overlooking the sea.

The smokehouse is open only in the summer season. Nexø Gamle Røgeri is an old small smokehouse on the northern edge of Nexø.

In high season you can eat and buy fresh smoked specialties from Bornholm with direct sea views - smoked herring, salmon, trout, eel and mackerel.

The smokehouse is open only in the summer season. Hasle smokehouse has a very long tradition. Nowhere on the island will we see so many chimneys in one place - 13 chimneys from 5 smokehouses. Part of the smokehouse has been transformed into a museum and arranged as it was at the end of the 19th century. You can learn a lot about the history and process of smoking herring there.

In the shop you can buy fresh smoked products or sit at a table between the buildings and eat fish.
